Step into an evening of refined flavours, cultural immersion, and dining unlike anything else in Suva. The Passport to Flavour Series invites you to explore the world through cuisine, one destination at a time.

This October, experience the flavours of Singapore with a curated selection of traditional and contemporary dishes — thoughtfully presented through a semi-buffet format. Guests are welcome to help themselves to starters, sides, and desserts from the display stations, while main proteins are served to the table for a more personal, restaurant-style touch.

Buffet (Salad/ entrée)

  • Rojak – A traditional Singapore salad of fresh fruits, vegetables, and crispy tofu tossed in a sweet-spicy tamarind peanut sauce
  • Fried turnip cake – Golden pan-seared rice cake, crafted from daikon radish, served with chili sauce
  • Cereal chicken – Crispy chicken wok-fried with buttery cereal flakes, curry leaves, and a hint of chili
  • Gado gado – Crisp vegetables, tofu, and egg paired with a creamy peanut-chili dressing

Noodle Live Station

  • Soto ayum – Traditional chicken soup with turmeric broth, shredded chicken, and fresh herbs

Buffet (Hot)

  • Nasi goreng – Aromatic wok-fried rice with seasonal vegetables, chicken and spicy sambal
  • Mee goreng – Wok-tossed egg noodles with garden vegetables, tofu, and a rich sweet soy sauce
  • Long bean with sambal – Wok-tossed long bean in a spicy sambal chili sauce

Chef’s featured protein of the evening is all served directly to your table, which includes

  • Chicken laksa – Spicy coconut curry soup with tender chicken, tofu puffs and fresh herbs
  • Singapore chilli prawn with fried bun – Prawns tossed in a rich, tangy chili-tomato sauce with hints of garlic and ginger
  • Sambal fish – Pan-seared fish fillet glazed with a fragrant sambal chili sauce
  • Claypot tofu – Puffed tofu and mixed vegetables braised in a savory soy-based sauce

To finish, enjoy Thai desserts from the dessert station

  • Mango and pomelo sago
  • Sesame rice ball in ginger syrup
  • Sweet glutinous rice ball
  • Seasonal cut fruit
